This recipe was easy, but I don’t think I’ll make it again. The pureed consistency was strange, because the corn gives the end result this fibrous texture. And the flavor doesn’t go with any dish that I can think of. Not quite thick enough to be a side for enchiladas. Not smooth enough to put on top of rice. Just sort of ho hum.

If I had to do it again I would probably add the corn in after pureeing the pepper and onion base. That would remove the strange texture problem and would give it more substance. Then it might make a good side dish.

However, Joey says that it’s awesome on bread and that it gets more of a corn flavor after sitting in the fridge for a day.

    not sure if you have access to one, but if you put corn through a juicer and cook it down, it turns into a really nice sauce. granted, it's definitely better mounted with a little bit of butter, but you can you some veg stock to bulk it out a bit and add some other stuff to it. definitely a really strong corn flavor. might be good with a little bit of silken tofu put through a food processor/blender to really give it a little more substance. just some ideas.

    I really like that idea – I've never had corn juice before!
    I don't have a juicer at the moment – we tried a centrifugal one from Amazon and it was horrible. May try out a masticator at some point and then I'll definitely give this a shot. Any juicer recommendations?

    the only juicer i've really used is the one from champion. i use it at work, but i'm pretty sure they have home versions. the only thing is that they're pretty heavy and bulky, so you may need to clear quite a bit of space on your counter top for it. i'm not sure how expensive they are either.
